Grilled Peach Salad with Burrata

Ingredients

  • 3 whole peaches, halved and pitted
  • 8 oz burrata cheese
  • 3 cups arugula
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • ¼ cup fresh basil, torn

Instructions

    Heat a grill or grill pan over medium-high until very hot, about 2 minutes.

    Brush peach halves lightly with olive oil. Grill cut-side down 3 minutes until caramelized and striped.

    Whisk together balsamic vinegar, remaining olive oil, salt, and pepper in a small bowl.

    Toss arugula with half the dressing and divide between two plates.

    Arrange warm peaches over greens. Top each plate with burrata, torn into pieces.

    Drizzle remaining dressing over everything and scatter basil on top. Serve immediately.
