Ingredients

  • 4 pieces lamb chops (1.5 inches thick)
  • 2 tbsp olive oil
  • 3 pieces garlic cloves, minced
  • 2 pieces fresh rosemary sprigs
  • 1 tbsp fresh lemon juice
  • ¾ tsp salt
  • ½ tsp black pepper

Instructions

    Pat lamb chops dry with paper towels.

    In a small bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper.

    Rub the marinade all over both sides of the lamb chops and tuck rosemary sprigs between them. Let sit for 10 minutes.

    Preheat grill to medium-high heat (400°F).

    Place lamb chops on grill and cook for 3–4 minutes per side for medium-rare (internal temp 130–135°F).

    Remove chops to a plate and rest for 3 minutes before serving.
