Ingredients
- 2 fillet white fish fillets
- 2 tbsp olive oil
- 1 cup canned diced tomatoes
- 1 cup canned white beans
- ½ small red onion
- ¼ cup cilantro

Pat the 2 fish fillets dry and season both sides with salt and pepper. Heat 1 tbsp of the olive oil in a skillet over medium-high until shimmering.

Place the fish in the skillet and cook until golden and opaque, about 3-4 minutes per side. Transfer to a plate and set aside.

Reduce heat to medium. Add the remaining 1 tbsp olive oil and the 0.5 small red onion (finely chopped). Cook until soft, about 2 minutes.

Stir in the 1 cup diced tomatoes and 1 cup drained white beans. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
