Ingredients

  • 1.5 lbs beef sirloin, cut into 1.5-inch cubes
  • ⅓ cup olive oil
  • 3 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1.5 tbsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

    Mix olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.

    Add beef cubes and toss to coat evenly. Let sit 20 minutes at room temperature.

    Thread beef onto skewers, leaving 1/4 inch between pieces for even cooking.

    Heat grill to high. Once grate is very hot, lay skewers on grill without moving.

    Grill 2 minutes per side for medium-rare. Beef should char at edges but stay pink inside.
