Grilled Beef Anticuchos with Crispy Potatoes & Sauces

Ingredients
- 1.5 lb beef sirloin, cut into 1.5-inch cubes
- 3 tbsp aji paste (or 2 tbsp chili powder mixed with 2 tsp vinegar)
- ½ lb fresh chorizo sausage
- ½ lb halloumi or queso fresco, cut into 1-inch cubes
- 1 lb yellow potatoes, cut into 1.5-inch chunks
- 1 batch fresh cilantro, jalapeño, lime juice, garlic & mayo (aji verde)
- 1 batch roasted red peppers, cumin, paprika, mayo & lime (aji rojo)

Toss beef cubes with aji paste, salt, and pepper in a bowl. Let sit 5 minutes.

Boil potato chunks in salted water until just tender, ~8 minutes. Drain and pat dry.

Thread beef, sausage slices (2-inch pieces), cheese cubes, and potatoes alternately onto metal skewers.

Heat grill to high. Oil the grate well. Grill skewers 3–4 minutes per side until beef is charred outside and cooked through.

Pulse cilantro, jalapeño, 1 garlic clove, 3 tbsp mayo, 1 lime's juice, salt & pepper for aji verde. Set aside.

Blend jarred roasted red peppers, 1 tsp cumin, 0.5 tsp paprika, 3 tbsp mayo, 0.5 lime's juice, and salt for aji rojo.

Slide skewers onto a platter. Serve hot with both sauces for dipping.
