Ingredients
- 1 lb beef sirloin, cut into 1-inch cubes
- 3 whole fresh green chilis (jalapeño or serrano), roughly chopped
- ½ cup fresh cilantro, roughly chopped
- 3 tbsp lime juice
- 1 tsp cumin
- 2 whole ground beef patties (4 oz each, pre-formed)
- ½ whole white onion, cut into thick rings

Blend green chilis, cilantro, lime juice, garlic, cumin, salt, and 2 tbsp water until smooth. Divide sauce in half.

Toss beef cubes with half the sauce; let sit 5 minutes while you thread them onto metal skewers with onion pieces.

Heat grill or grill pan to high. Oil grates. Sear beef skewers 2–3 minutes per side until edges char and centers stay medium-rare.

On the same grill, sear beef patties 2 minutes per side until a crust forms and internal temp hits 160°F.

Plate skewers and patties together. Spoon reserved aji verde sauce on the side or over the top.
