Ingredients

  • 6 whole jalapeño peppers
  • 3 whole garlic cloves
  • 1 teaspoon black peppercorns
  • ½ teaspoon salt
  • ¼ cup water

Instructions

    Place the 6 jalapeños and 3 garlic cloves on a baking sheet. Broil on high until the peppers are charred and blistered, about 8-10 minutes, turning once.

    Let the peppers cool slightly, then remove the stems (and seeds if you prefer milder heat).

    In a blender, combine the roasted jalapeños, garlic, 1 teaspoon black peppercorns, 0.5 teaspoon salt, and 0.25 cup water.

    Blend until smooth, scraping down the sides as needed. If too thick, add water 1 tablespoon at a time until it reaches a pourable consistency.

    Taste and adjust salt. Serve immediately or chill for 30 minutes to let flavors meld.
