Ingredients
- 1 cup arborio rice
- ½ pound shrimp, peeled and deveined
- 1 cup frozen peas
- 2.5 cups chicken or vegetable broth
- ½ cup parmesan cheese, grated
- 2 tablespoons olive oil

In a blender, puree 1 cup peas with 1/2 cup broth until smooth. Set aside.

Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 cup arborio rice and stir until coated and slightly translucent, about 2 minutes.

Add 2 cups broth, 1/2 cup at a time, stirring frequently. Wait until each addition is absorbed before adding more, until rice is creamy and tender, about 15 minutes.

Stir in the pea puree and 1/2 cup parmesan. Season with salt and pepper. Cook until heated through, about 2 minutes.

In a separate pan, sear 1/2 pound shrimp over medium-high heat until pink and opaque, about 2 minutes per side. Serve shrimp over risotto.
