Ingredients
- 1.25 lb boneless, skinless chicken breasts
- ¾ cup unsalted pumpkin seeds (pepitas)
- 2 whole jalapeños, roughly chopped
- 1 cup fresh cilantro (leaves + stems)
- 1.5 cup chicken broth
- 1 whole lime (juiced)
- ½ whole white onion, halved

Blend pumpkin seeds, jalapeños, cilantro, 0.5 cup broth, and lime juice until completely smooth, ~2 minutes.

Heat 2 tbsp oil in a large skillet over medium-high. Season chicken with salt and pepper, then sear 4 minutes per side until golden.

Pour the green sauce around the chicken. Add onion and remaining 1 cup broth, stirring to combine.

Reduce heat to medium and simmer, uncovered, until chicken reaches 165°F and sauce thickens slightly, ~10 minutes.
