Ingredients

  • 1.25 lb boneless, skinless chicken breasts
  • ¾ cup unsalted pumpkin seeds (pepitas)
  • 2 whole jalapeños, roughly chopped
  • 1 cup fresh cilantro (leaves + stems)
  • 1.5 cup chicken broth
  • 1 whole lime (juiced)
  • ½ whole white onion, halved

Instructions

  1. 1

Blend pumpkin seeds, jalapeños, cilantro, 0.5 cup broth, and lime juice until completely smooth, ~2 minutes.

  2. 2

Heat 2 tbsp oil in a large skillet over medium-high. Season chicken with salt and pepper, then sear 4 minutes per side until golden.

  3. 3

Pour the green sauce around the chicken. Add onion and remaining 1 cup broth, stirring to combine.

  4. 4

Reduce heat to medium and simmer, uncovered, until chicken reaches 165°F and sauce thickens slightly, ~10 minutes.

  5. 5

Remove from heat. Taste and adjust salt. Discard onion before serving.
