Ingredients

  • 1.5 cups cottage cheese
  • ¾ cup, packed fresh herbs (basil, parsley, dill, chives)
  • 1 whole (zested + juiced) lemon
  • 4 whole whole green onions
  • ¾ cup roasted chickpeas (store-bought, seasoned)
  • 3 cups baby arugula or mixed greens

Instructions

    Roughly chop the fresh herbs and blend with cottage cheese, lemon juice, zest, 2 tbsp water, salt, and pepper until creamy but still textured.

    Divide greens between two bowls and top each with a generous scoop of the green goddess cottage cheese.
