Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic cloves, minced
  • 1.5 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup Greek yogurt
  • ½ medium cucumber, grated
  • 1 tbsp fresh dill
  • 1 whole lemon
  • 4 pieces pita bread
  • ½ medium red onion, sliced
  • 2 medium tomatoes, diced

Instructions

    Cut chicken breasts into 1.5-inch cubes and place in a large bowl.

    Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a small bowl.

    Pour marinade over chicken, toss well to coat, and refrigerate for at least 15 minutes (or up to 2 hours).

    While chicken marinates, make tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, dill, salt, and a squeeze of lemon juice.

    Soak wooden skewers in water for 15 minutes to prevent burning.

    Preheat grill to medium-high heat (about 400°F).

    Thread marinated chicken cubes onto skewers, leaving small gaps between pieces.

    Grill skewers for 10-12 minutes, turning every 3 minutes, until chicken is cooked through and lightly charred.

    Remove skewers from grill and rest for 2 minutes.

    Warm pita bread on the grill for 1 minute per side.
