Greek Chicken Gyro

Ingredients

  • 1 lb chicken breast
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp each salt and pepper
  • ½ cup Greek yogurt
  • 1 set pita bread, tomato, cucumber

Instructions

    Slice chicken breast in half horizontally to create two thin cutlets. Pat dry with paper towels.

    Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Coat chicken generously and let sit 10 minutes.

    Dice tomato and cucumber into small chunks. Stir yogurt with a pinch of salt and pepper in a small bowl.

    Heat a skillet over medium-high until very hot, about 90 seconds. Add chicken and cook 4–5 minutes per side until golden and cooked through.

    Transfer chicken to a cutting board and let rest 2 minutes. Slice into strips.

    Warm pita in the skillet for 30 seconds per side, or wrap in foil and microwave for 1 minute.

    Spread 2 tbsp yogurt sauce on each pita. Layer chicken strips, tomato, and cucumber. Roll tightly and serve.
