Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1.5 tsp dried oregano
  • ¾ tsp garlic powder
  • ½ whole lemon (juiced)
  • 2 whole pita bread
  • ¾ cup tzatziki sauce
  • 1 cup tomato, cucumber, and red onion (diced)

Instructions

    Cut chicken thighs into 1-inch bite-sized pieces. Pat dry with paper towels.

    Mix oregano, garlic powder, salt, and pepper in a small bowl.

    Heat olive oil in a 10-inch skillet over medium-high heat until shimmering, ~90 seconds.

    Add chicken and seasoning blend. Cook, stirring occasionally, until golden and cooked through, ~8 minutes.

    Squeeze lemon juice over the chicken and stir. Remove from heat.

    Warm pita bread in the skillet or toaster for 30 seconds per side until soft and pliable.

    Spread 3 tbsp tzatziki sauce inside each pita. Add half the chicken and half the tomato-cucumber mixture.

    Serve immediately while warm.
