Ingredients
- 2 pieces (about 6 oz each) chicken breast
- 1.5 cups rice (cooked)
- 1 medium, diced cucumber
- ½ cup tzatziki

Pat chicken dry with paper towels. Season both sides generously with salt and black pepper.

Heat 1 tbsp oil in a skillet over medium-high until shimmering. Sear chicken 5–6 minutes per side until golden and cooked through. Transfer to a plate and rest 2 minutes, then slice.
