Ingredients
- 1 cup masa harina
- ¾ cup water
- ½ tsp salt
- ½ lb ground beef
- ½ medium onion
- 3 tbsp vegetable oil

In a bowl, mix 1 cup masa harina, 0.5 tsp salt, and 0.75 cup water until a soft dough forms. If too dry, add water 1 tbsp at a time.

In a skillet, heat 1 tbsp oil over medium. Add 0.5 chopped onion and 0.5 lb ground beef; cook until beef is browned and onion soft, about 8 minutes. Season with salt and pepper.

Divide dough into 4 balls. Flatten each into a 4-inch disc. Place 2 tbsp of beef mixture on one half, fold over, and press edges to seal.

Heat remaining 2 tbsp oil in a skillet over medium-high. Cook gorditas until golden and crisp, about 3 minutes per side. Drain on paper towels and serve hot.
