Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 can (14 oz) canned crushed tomatoes
  • ½ tsp turmeric powder
  • 4 large eggs

Instructions

    Heat oil in a 10-inch skillet over medium. Add onion and cook, stirring occasionally, until golden and soft, about 6 minutes.

    Add garlic and cook 30 seconds until fragrant. Stir in crushed tomatoes and turmeric; simmer 3 minutes until slightly thickened.

    Crack eggs into a bowl, whisk lightly with a pinch of salt and pepper.

    Pour eggs into the simmering tomato sauce and stir gently with a spoon, folding occasionally, until eggs are soft and curds form, about 2 minutes.
