Ingredients
- 4 whole large eggs
- 2 tbsp dashi stock or warm water
- ½ tbsp soy sauce
- 1 tbsp sugar
- ½ tbsp mirin
- 2 tbsp neutral oil

Whisk eggs, dashi, soy sauce, sugar, and mirin in a bowl until smooth.

Heat oil in a rectangular tamagoyaki pan or 8-inch nonstick skillet over medium heat until shimmering, ~60 seconds.

Pour a thin layer of egg mixture (about 1/4 of total) into the pan, tilting to coat evenly.

When the first layer is just set but still slightly wet on top, about 2 minutes, fold it toward you into thirds.

Push the folded omelette to the far end of the pan. Pour in the next layer of egg; let it flow under and around the fold.

Once set, fold again into thirds. Repeat with remaining egg until all is used, rolling and stacking layers.

Slide the tamagoyaki onto a cutting board and slice into 1-inch pieces while still warm.
