Ingredients
- 1.5 lbs mangalica pork shoulder or pork belly (bone-in or boneless)
- 1 tbsp kosher salt
- 1 tsp black pepper
- 4 clove garlic cloves, minced
- 1 tsp fresh thyme or Hungarian paprika
- 2 tbsp olive oil

Pat the pork completely dry with paper towels, rubbing both sides and all creases.

Season generously all over with salt, pepper, minced garlic, and thyme or paprika.

Heat olive oil in a heavy 12-inch skillet over medium-high until it shimmers, ~2 minutes.

Sear the pork 4 minutes per side without moving — the surface should be deep golden brown.

Transfer the skillet to a preheated 400°F oven and roast 12–14 minutes until the internal temperature reaches 145°F at the thickest point.
