Golden Cornmeal Hush Puppies

Ingredients
- 1 cup cornmeal (yellow, not instant)
- ½ cup all-purpose flour
- 1 large egg
- ¾ cup whole milk
- 3 tbsp scallions (green onions), chopped
- 1.5 quarts vegetable oil, for frying

Whisk cornmeal, flour, 1 tsp salt, and 0.5 tsp black pepper in a large bowl.

Whisk egg and milk together in a separate bowl, then pour into the dry mixture and stir until just combined.

Fold in the chopped scallions. Batter should be thick and spoonable, not runny.

Heat oil in a heavy pot or deep skillet to 350°F on a deep-fry thermometer, about 5–8 minutes.

Using a small cookie scoop or spoon, drop 1-inch balls into the hot oil in batches (don't overcrowd). Fry 2–3 minutes until deep golden brown.
