Ingredients
- ¼ cup soy sauce
- 2 tbsp mirin
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 14 oz extra-firm tofu, pressed
- 1.5 cups cooked sushi rice
- 3 stalks scallions, sliced (white + green separated)
- 1 tbsp sesame seeds

Whisk soy sauce, mirin, vinegar, garlic, and ginger in a small bowl until combined. Set aside.

Cut pressed tofu into 0.75-inch cubes. Heat neutral oil in a large skillet over medium-high until shimmering.

Add tofu to the hot skillet in a single layer. Let each side sear without moving until golden, about 2 minutes per side.

Pour the teriyaki sauce over the tofu. Toss gently and cook, stirring occasionally, until sauce reduces and coats the tofu, 3–4 minutes.

Divide cooked rice between two bowls. Top with glazed tofu and sauce. Scatter white parts of scallions, then green tops and sesame seeds.
