Ingredients

  • 1.5 cups cooked rice
  • 12 oz chicken breast, boneless and skinless
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, minced
  • 1 tbsp granulated sugar
  • 2 whole green onions, sliced

Instructions

    Divide cooked rice between two bowls.

    Slice chicken breast into 0.5-inch-thick cutlets. Pat dry with paper towels.

    Heat 1 tbsp oil in a skillet over medium-high until shimmering. Sear chicken 3 minutes per side until golden and cooked through.

    Stir soy sauce, ginger, and sugar together in a small bowl until sugar dissolves.

    Pour glaze over chicken and tilt the pan to coat. Cook 1 minute until sauce thickens and clings to the meat.

    Lay glazed chicken over rice, drizzle with pan sauce, and top with green onions. Serve immediately.
