Ingredients
- 1 lb chicken breast
- 2 tbsp fresh ginger
- 3 cloves garlic
- 2 red chili peppers
- 2 tbsp soy sauce
- 2 tbsp cooking oil

Slice the 1 lb chicken breast into thin strips. Peel and julienne the 2 tbsp ginger, mince the 3 garlic cloves, and thinly slice the 2 red chili peppers.

Heat 2 tbsp cooking oil in a wok or large skillet over high heat until shimmering. Add the chicken and stir-fry until lightly browned, about 3-4 minutes.

Add the ginger, garlic, and chili to the pan. Stir-fry for 1-2 minutes until fragrant and the chicken is cooked through.

Pour in the 2 tbsp soy sauce and toss everything to coat. Cook for another minute until the sauce slightly thickens and coats the chicken.

Serve hot over steamed rice, with cucumber slices and a fried egg on the side if desired.
