Ingredients
- 1 can (14 oz) canned crushed tomatoes
- 1 tbsp ginger, grated
- 1 whole fresh scotch bonnet or habanero pepper, minced
- 2 tbsp tomato paste
- 1.5 lbs boneless chicken thighs, 1.5-inch chunks
- ½ head green cabbage, sliced thin
- 1 can (15 oz) canned black beans, drained and rinsed
- 1 whole lime (juiced)

Combine crushed tomatoes, ginger, minced scotch bonnet, and tomato paste in a bowl. Stir until smooth.

Heat oil in a large skillet over medium-high until it shimmers. Add chicken chunks and cook, stirring, until browned on all sides, ~7 minutes.

Pour shito sauce over chicken. Stir to coat. Simmer uncovered for 8 minutes until chicken is cooked through and sauce darkens slightly.

Toss cabbage with half the lime juice and a pinch of salt. Warm black beans in a small pot or microwave, ~2 minutes. Season with remaining lime juice and salt.

Taste the shito chicken and adjust salt and spice heat. Serve alongside the cabbage slaw and warm black beans.
