Ingredients

  • 4 links weisswurst (bavarian white sausage)
  • 2 cups beef or chicken broth
  • 3 tbsp whole-grain mustard
  • 2 large soft pretzels
  • ½ medium onion
  • 1 leaf bay leaf
  • 4 whole black peppercorns

Instructions

    Pour broth into a wide pot or saucepan. Add halved onion, bay leaf, and peppercorns.

    Bring broth to a gentle simmer over medium heat, ~3 minutes.

    Add weisswurst to simmering broth. Maintain a bare simmer—do not boil.

    Poach for 8–10 minutes. Sausages are done when they float and feel firm.

    Warm pretzels in a 300°F oven or toaster oven for 2–3 minutes if desired.
