- 1 medium onion
- 1 large egg
- ½ cup breadcrumbs
- 3 medium tomatoes
- 2 tbsp white wine vinegar
- 3 tbsp olive oil
- ¼ cup parsley

Preheat oven to 375°F. Finely chop half the onion and mix with the ground beef, egg, breadcrumbs, 1 tsp salt, and 1/2 tsp pepper until just combined.

Shape the meat mixture into a loaf and place in a lightly oiled 9x5 inch loaf pan. Bake until the internal temperature reaches 160°F, about 40-45 minutes.

While the meatloaf bakes, thinly slice the remaining onion half and the tomatoes. Place them in a bowl.

Whisk together the vinegar, olive oil, 1/4 tsp salt, and a pinch of pepper. Pour over the tomatoes and onions, then toss gently.
