Ingredients

  • 1.5 lb ground beef
  • 1 medium onion
  • 1 large egg
  • ½ cup breadcrumbs
  • 3 medium tomatoes
  • 2 tbsp white wine vinegar
  • 3 tbsp olive oil
  • ¼ cup parsley

    Preheat oven to 375°F. Finely chop half the onion and mix with the ground beef, egg, breadcrumbs, 1 tsp salt, and 1/2 tsp pepper until just combined.

    Shape the meat mixture into a loaf and place in a lightly oiled 9x5 inch loaf pan. Bake until the internal temperature reaches 160°F, about 40-45 minutes.

    While the meatloaf bakes, thinly slice the remaining onion half and the tomatoes. Place them in a bowl.

    Whisk together the vinegar, olive oil, 1/4 tsp salt, and a pinch of pepper. Pour over the tomatoes and onions, then toss gently.

    Chop the parsley and stir half into the salad. Let the salad sit at room temperature while the meatloaf finishes.

    Remove the meatloaf from the oven and let it rest for 5 minutes before slicing. Serve slices with the tomato salad, sprinkled with the remaining parsley.
