Ingredients

  • 1 whole medium potato
  • 150 g polony or beef sausage
  • 1 whole egg
  • 1 whole crusty baguette or hoagie roll
  • 2 tbsp piri-piri sauce or hot sauce
  • 1 tbsp butter or mayonnaise
  • 1 pinch salt and black pepper
  • 3 tbsp vegetable oil for frying

Instructions

  1. 1

Cut potato into 1/4-inch-thick sticks or wedges. Pat dry with paper towels.

  2. 2

Slice polony into 1/4-inch rounds. Halve the baguette lengthwise.

  3. 3

Heat oil in a skillet over medium-high until shimmering. Add potato sticks, frying until golden and crispy, ~8 minutes. Drain on paper towels; season with salt.

  4. 4

In the same skillet, fry polony slices until edges curl and char lightly, ~3 minutes. Set aside.

  5. 5

Crack egg into the skillet. Fry sunny-side up until whites set but yolk stays runny, ~2 minutes.

  6. 6

Spread butter or mayo on the bottom baguette half. Layer with fried potatoes.

  7. 7

Top potatoes with polony slices and the fried egg. Drizzle with piri-piri sauce.

  8. 8

Close the sandwich and press gently. Serve immediately while everything is hot.
