Ingredients
- 1 whole medium potato
- 150 g polony or beef sausage
- 1 whole egg
- 1 whole crusty baguette or hoagie roll
- 2 tbsp piri-piri sauce or hot sauce
- 1 tbsp butter or mayonnaise
- 1 pinch salt and black pepper
- 3 tbsp vegetable oil for frying

Cut potato into 1/4-inch-thick sticks or wedges. Pat dry with paper towels.

Slice polony into 1/4-inch rounds. Halve the baguette lengthwise.

Heat oil in a skillet over medium-high until shimmering. Add potato sticks, frying until golden and crispy, ~8 minutes. Drain on paper towels; season with salt.

In the same skillet, fry polony slices until edges curl and char lightly, ~3 minutes. Set aside.

Crack egg into the skillet. Fry sunny-side up until whites set but yolk stays runny, ~2 minutes.

Spread butter or mayo on the bottom baguette half. Layer with fried potatoes.

Top potatoes with polony slices and the fried egg. Drizzle with piri-piri sauce.
