Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 4 cloves garlic cloves, minced
  • 1 lb shrimp, peeled and deveined
  • 8 oz snap peas
  • 1 medium red bell pepper, sliced
  • 2 tbsp olive oil
  • 1 to taste salt and pepper to taste

Instructions

    Whisk together soy sauce, ginger, and garlic in a small bowl. Set aside.

    Pat shrimp dry with paper towels. Season lightly with salt and pepper.

    Heat oil in a 12-inch skillet over medium-high until shimmering, about 60 seconds.

    Add shrimp in a single layer. Cook 90 seconds without stirring until one side turns opaque.

    Flip shrimp and cook another 90 seconds until just cooked through. Transfer to a plate.

    Add bell pepper and snap peas to the same skillet. Stir-fry for 3 minutes until tender-crisp.

    Pour the garlic-soy sauce into the skillet and stir constantly for 30 seconds until fragrant.

    Return shrimp to the skillet and toss to coat. Cook for 30 seconds to heat through.

    Taste and adjust salt and pepper. Serve hot over steamed rice.
