Ingredients
- ¾ lb shrimp, large, peeled and deveined
- 4 cloves garlic, minced
- 1 whole lime (juiced + zested)
- 1.5 cups cooked rice (or instant rice)
- 1 medium bell pepper, sliced
- ¼ cup fresh cilantro, chopped
- 3 tbsp olive oil

Heat 2 tbsp olive oil in a large skillet over medium-high heat, ~2 minutes.

Add garlic and cook until fragrant, stirring constantly, ~45 seconds.

Add shrimp to the skillet and cook without stirring for 2 minutes until edges turn pink.

Flip shrimp and cook 1 more minute until centers are opaque.

Push shrimp to the side; add bell pepper to empty side and sauté 2 minutes.

Toss shrimp and peppers together; squeeze in lime juice and add lime zest.
