Ingredients

  • 2 cups cooked rice (white or brown)
  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 whole lime (juiced + zested)
  • 1 whole avocado, sliced
  • 2 tbsp hot sauce (or sriracha)

Instructions

    Pat shrimp dry with paper towels. Season generously with salt and pepper.

    Heat olive oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add garlic and cook for 30 seconds until fragrant, stirring constantly.

    Add shrimp in a single layer. Let them sear for 2 minutes without moving.

    Flip shrimp and cook 1–2 minutes more until pink throughout and opaque.

    Squeeze lime juice over the shrimp and stir for 15 seconds to combine.

    Divide rice between two bowls and top with shrimp, avocado slices, and lime zest.
