Ingredients

  • 4 pieces lamb chops (8 oz total, 1-inch thick)
  • 3 tbsp butter
  • 3 cloves garlic cloves, minced
  • 1 whole lemon (zested + juiced)
  • 2 sprigs fresh rosemary sprigs
  • 1 tbsp olive oil

Instructions

    Pat lamb chops dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat olive oil in a 10-inch skillet over medium-high until shimmering, about 60 seconds.

    Sear chops 90 seconds per side without moving—edges should look golden and brown. Remove to a plate.

    Reduce heat to medium. Add butter, garlic, and rosemary sprigs. Cook until garlic is fragrant, 30 seconds.

    Return chops to skillet. Squeeze lemon juice over top and swirl to coat. Cook 30 seconds more.

    Transfer to plates. Spoon pan sauce over chops. Top with lemon zest and serve immediately.
