Ingredients

  • 4 chops lamb chops (rib or loin), about 1.5 inches thick
  • 4 cloves garlic, minced
  • 1 whole lime, halved
  • ½ tsp cumin
  • ¼ cup fresh cilantro or parsley, chopped
  • 2 tbsp neutral oil

Instructions

  1. 1

Pat lamb chops dry. Season both sides generously with salt, pepper, and cumin.

  2. 2

Heat oil in a heavy skillet over medium-high until it shimmers, about 90 seconds.

  3. 3

Sear chops 2 minutes per side without moving. Center should feel soft when pressed.

  4. 4

Reduce heat to medium. Add minced garlic, cook 30 seconds until fragrant.

  5. 5

Remove from heat. Squeeze both lime halves over chops, sprinkle with cilantro.

  6. 6

Rest 3 minutes, then serve immediately with any pan juices drizzled over.

Tools you’ll need

  • 12-inch heavy skillet (cast iron or stainless steel)
  • paper towels
  • instant-read meat thermometer (optional but helpful)
