Garlic & Herb Churrasco

Ingredients
- 4 steaks (8–10 oz each) beef ribeye or strip steaks, 1.5 inches thick
- 2 tsp coarse sea salt
- 1 tsp black pepper
- 4 tbsp butter
- 6 cloves garlic, minced
- ¼ cup fresh parsley, chopped

Pat steaks bone-dry with paper towels. Season both sides generously with coarse salt and black pepper.

Heat a 12-inch cast iron skillet over high heat until it is smoking, about 2 minutes.

Sear steaks 90 seconds per side without moving—do not flip early. Crust should be dark brown and caramelized.

Transfer steaks to a plate. Add butter and minced garlic to the skillet, swirl 30 seconds until fragrant.

Pour garlic butter over steaks. Scatter chopped parsley on top. Rest 5 minutes before serving.
