Ingredients
- 1 lb russet potatoes
- 6 cloves garlic cloves, minced
- 3 tbsp olive oil
- 2 cups vegetable oil for frying
- ¼ cup fresh parsley, finely chopped
- ½ cup Parmesan cheese, grated
- 1 tsp sea salt
- ¼ tsp black pepper

Cut potatoes into 0.25-inch thick fries. Soak in cold water for 30 minutes to remove excess starch.

Heat 3 tbsp olive oil in a small skillet over medium heat. Add minced garlic and cook for 2-3 minutes until fragrant and light golden. Set aside.

Heat vegetable oil to 350°F in a heavy-bottomed pot or deep fryer.

Drain potatoes and pat dry with paper towels. Working in batches, fry potatoes for 4-5 minutes until light golden. Remove to paper towels.

Increase oil temperature to 375°F. Fry potatoes again for 2-3 minutes until deep golden and crispy. Drain on paper towels.

Transfer hot fries to a large bowl. Add roasted garlic with its oil, salt, and pepper. Toss gently.
