Ingredients

  • 2 6-oz fillets salmon fillets
  • 1 lb potatoes
  • 4 tbsp butter
  • 3 cloves, minced garlic
  • 2 tbsp, chopped fresh dill

Instructions

    Cut potatoes into 1-inch chunks, boil in salted water until fork-tender, ~12 minutes.

    Pat salmon dry, season both sides with salt and pepper.

    Heat 1 tbsp oil in a skillet over medium-high until shimmering, ~90 seconds.

    Sear salmon skin-side up for 3 minutes without moving, then flip and cook 2 minutes more until opaque.

    Drain potatoes, return to pot, mash with 3 tbsp butter, salt, and pepper until creamy.

    Melt remaining 1 tbsp butter with minced garlic in the salmon skillet over low heat for 60 seconds, then stir in dill and spoon over salmon.
