Ingredients

  • 1.5 lb littleneck clams
  • 4 cloves garlic cloves, minced
  • ½ cup dry white wine
  • ¼ cup fresh cilantro, chopped
  • 4 slices crusty bread
  • 3 tbsp olive oil

Instructions

  1. 1

Rinse clams under cold water, scrubbing shells with a stiff brush to remove any sand.

  2. 2

Heat olive oil in a large skillet over medium-high until fragrant, about 60 seconds.

  3. 3

Add minced garlic and cook 30 seconds, stirring constantly—stop before it browns.

  4. 4

Pour in white wine, then add clams. Cover and cook 5-7 minutes until all shells open.

  5. 5

Discard any unopened shells, stir in cilantro, and season with salt and pepper.

  6. 6

Serve clams and broth in bowls with toasted bread on the side for dipping.
