Garlic Butter Pasta with Spinach

Ingredients
- 8 oz spaghetti or linguine
- 3 tbsp butter
- 3 cloves garlic, minced
- 3 cups fresh spinach, loosely packed
- ½ cup Parmesan cheese, grated

Boil salted water in a large pot. Add pasta and cook until al dente, ~9 minutes.

While pasta cooks, melt butter in a large skillet over medium heat, ~1 minute.

Add minced garlic and cook until fragrant, ~45 seconds. Do not brown.

Reserve 0.5 cup pasta water, then drain pasta. Set aside.

Add spinach to the skillet with garlic butter and stir until wilted, ~60 seconds.

Add hot pasta to the skillet and toss to coat. Pour in reserved pasta water gradually.

Stir in half the Parmesan until the sauce is silky. Top with remaining Parmesan.
