Ingredients

  • 2 whole lobster tails
  • 4 tbsp butter
  • 4 cloves, minced garlic
  • 1 whole (zested + juiced) lime
  • 2 tbsp fish sauce
  • ½ cup, chopped fresh herbs (cilantro, dill, or Thai basil)
  • ½ tsp chili flakes
  • 1 pinch rock salt

Instructions

    Preheat grill or grill pan to high heat. Pat lobster tails dry with paper towels.

    Using kitchen shears, cut down the soft shell of each tail to expose the meat; stop at the hard fin.

    Melt butter in a small pan over medium heat. Add minced garlic and cook 30 seconds until fragrant, then stir in lime zest.

    Brush lobster meat generously with garlic butter on both sides. Sprinkle with rock salt and chili flakes.

    Place tails meat-side down on grill. Cook 3 minutes without moving, then flip and brush again with butter.

    Cook until flesh is opaque and firm, 2–3 minutes more. Squeeze fresh lime juice over top and sprinkle with herbs.
