Ingredients

  • ½ cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 1 whole large egg
  • 1 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • ½ cup rainbow sprinkles (nonpareils or pearl sprinkles work best)

Instructions

  1. 1

Set the oven to 350°F and wait until the indicator light or beep tells you it has finished preheating, about 10 minutes.

  2. 2

Line two large baking sheets with parchment paper by placing a sheet of parchment flat across each one, pressing it down so it stays in place.

  3. 3

In a large mixing bowl, combine the softened butter and sugar; use a wooden spoon to stir and press until the mixture looks grainy and pale, about 1 minute.

  4. 4

Crack the egg into a small bowl, then pour it into the butter mixture and stir until the batter looks uniform and slightly fluffy, about 30 seconds.

  5. 5

Add the vanilla extract and stir until combined, about 10 seconds.

  6. 6

Pour the flour into the bowl and stir with the wooden spoon until no white streaks of flour remain and the dough looks smooth, about 45 seconds.

  7. 7

Add the rainbow sprinkles and fold them into the dough using a rubber spatula—lift dough from the bottom, fold it over the sprinkles, turn the bowl a quarter turn, and repeat until sprinkles are evenly distributed, about 1 minute.

  8. 8

Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets in mounds about 2 inches apart—you should fit 12 cookies on each sheet.

  9. 9

Bake in the preheated oven for 10 to 12 minutes, until the edges are light golden brown and the tops are set but still soft to the touch.

  10. 10

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes—they will firm up as they sit.

  11. 11

Transfer each cookie to a cooling rack or plate using a spatula and let them cool completely, about 10 more minutes.
