Ingredients

  • 1.5 lb pork spare ribs or rib tips
  • 8 cups water
  • 3 tbsp fresh ginger, sliced into coins
  • 3 whole star anise
  • 3 tbsp soy sauce
  • 8 oz egg noodles (fresh or dried)
  • 1 pinch salt and white pepper to taste

Instructions

    Blanch pork ribs in boiling water for 2 minutes, then drain and rinse under cold water.

    Add ribs, water, ginger slices, and star anise to a large pot. Bring to a boil.

    Reduce heat to low, cover, and simmer for 30 minutes until ribs are tender.

    Stir in soy sauce. Taste and adjust with salt and white pepper.

    Increase heat to medium-high. When broth is at a rolling boil, add noodles.

    Cook noodles according to package directions, stirring occasionally, 3–5 minutes.

    Ladle into bowls with ribs and broth. Serve hot.
