Ingredients
- 1.5 lb pork spare ribs or rib tips
- 8 cups water
- 3 tbsp fresh ginger, sliced into coins
- 3 whole star anise
- 3 tbsp soy sauce
- 8 oz egg noodles (fresh or dried)
- 1 pinch salt and white pepper to taste

Blanch pork ribs in boiling water for 2 minutes, then drain and rinse under cold water.

Add ribs, water, ginger slices, and star anise to a large pot. Bring to a boil.

Reduce heat to low, cover, and simmer for 30 minutes until ribs are tender.

Stir in soy sauce. Taste and adjust with salt and white pepper.

Increase heat to medium-high. When broth is at a rolling boil, add noodles.
