A quick and easy fruit ferment that's tangy, fizzy, and full of probiotics. Perfect as a refreshing drink or a topping for yogurt and oatmeal.

Ingredients

  • 2 cups mixed fruit (e.g., berries, peaches, or apples)
  • 4 cups water
  • ¼ cup sugar
  • ½ teaspoon salt

Instructions

    Wash and chop the 2 cups mixed fruit into small pieces, removing any pits or stems. Place them in a clean glass jar.

    In a separate bowl, stir the 4 cups water, 0.25 cup sugar, and 0.5 teaspoon salt until the sugar and salt dissolve completely.

    Pour the brine over the fruit, making sure the fruit is fully submerged. Cover the jar with a cloth or coffee filter and secure with a rubber band.

    Let the jar sit at room temperature for 2-3 days, stirring once a day. You'll see bubbles and foam forming on top, and it will smell tangy and slightly sweet.

    Once it's fizzy and tangy to your liking, transfer the ferment to the fridge. Serve chilled, with some of the liquid and fruit pieces.
