Ingredients
- 6 cups beef broth
- ½ cup all-purpose flour
- 2 whole eggs
- ½ cup whole milk
- 3 tbsp fresh parsley, chopped
- 2 tbsp butter

Whisk eggs, milk, flour, 1/4 tsp salt, and pepper until smooth, no lumps.

Heat butter in a 10-inch non-stick skillet over medium-high until shimmering, ~1 minute.

Pour batter in, tilt pan to spread thin. Cook 60–90 seconds until golden on bottom, then flip and cook 30 seconds more. Slide onto a plate.

Bring beef broth to a boil in a large pot over high heat, ~4 minutes.

Tear the cooled pancake into rough 1-inch strips. Stir into the broth.

Simmer 2 minutes. Season with salt and pepper to taste. Stir in parsley. Serve hot.
