Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 2 cups mixed vegetables (e.g., bell pepper, carrot, cabbage)
  • 3 tbsp soy sauce
  • 2 cloves garlic
  • 2 stalks green onions

Instructions

  1. 1

Soak the 8 oz rice noodles in hot water until pliable, about 8 minutes, then drain well.

  2. 2

Heat the 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the 2 minced garlic cloves and stir-fry until fragrant, about 30 seconds.

  3. 3

Add the 2 cups mixed vegetables and stir-fry until crisp-tender, about 3-4 minutes, keeping them bright and slightly crunchy.

  4. 4

Add the drained noodles and 3 tbsp soy sauce. Toss everything together, letting the noodles absorb the sauce, about 2 minutes, until heated through and evenly coated.

  5. 5

Stir in the 2 sliced green onions, then serve hot, garnished with extra green onions if desired.
