Ingredients

  • 2 cups cooked rice
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup mayonnaise
  • 1 tbsp lemon juice
  • ½ cup vegetable oil

Instructions

    In a bowl, mix 2 cups cooked rice, 1 beaten egg, and 0.5 cup breadcrumbs until well combined. Season with salt and pepper.

    Shape the mixture into 8 balls, pressing firmly so they hold together.

    Heat 0.5 cup vegetable oil in a skillet over medium-high. Fry the rice balls in batches, turning occasionally, until golden and crispy all over, about 5-7 minutes.

    In a small bowl, stir together 0.25 cup mayonnaise and 1 tbsp lemon juice to make the dipping sauce.
