Ingredients

  • 1.5 lb white fish fillets
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup vegetable oil

Instructions

  1. 1

Pat the 1.5 lb fish fillets dry with paper towels and season both sides with 1 tsp salt and 0.5 tsp black pepper.

  2. 2

Set up a breading station: place 0.5 cup flour in one shallow dish, beat 2 eggs in a second, and put 1 cup breadcrumbs in a third.

  3. 3

Dredge each fillet in the flour, shaking off excess, then dip in the egg, and finally coat with breadcrumbs, pressing gently to adhere.

  4. 4

Heat 0.5 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes.

  5. 5

Fry the fillets in a single layer without crowding, cooking until golden brown and crispy, about 3-4 minutes per side. The fish should flake easily with a fork.

  6. 6

Transfer the fried fillets to a paper-towel-lined plate to drain excess oil. Serve hot with lemon wedges or tartar sauce if desired.
