Ingredients

  • 8 oz pasta (penne or similar)
  • 1 lb fresh tomatoes, roughly chopped
  • 2 cloves garlic, minced
  • ½ cup fresh basil, divided

Instructions

    Boil pasta in salted water until al dente, about 9 minutes, then drain and reserve 1 cup pasta water.

    Heat oil in a large skillet over medium, then add garlic and cook 30 seconds until fragrant.

    Add tomatoes and a pinch of salt, then simmer 8 minutes until they break down and soften.

    Stir in half the basil, then toss the cooked pasta into the sauce.

    Add pasta water 1/4 cup at a time until the sauce coats the noodles silkily.

    Divide into bowls, top with remaining basil and grated Parmesan, then serve immediately.
