Ingredients
- ¼ cup all-purpose flour
- 1 sheet (14 oz) puff pastry, thawed
- ⅓ cup granulated sugar
- 1.5 tsp ground cinnamon
- 2 tbsp butter, melted
- 2 tbsp coarse sugar for topping
- ¼ tsp salt
Instructions
- 1
Preheat oven to 400°F. Line two baking sheets with parchment paper.
- 2
Mix granulated sugar, cinnamon, and salt in a small bowl until evenly combined.
- 3
Dust a work surface lightly with flour. Unfold puff pastry and lay flat.
- 4
Brush pastry with melted butter, leaving a 1/4-inch border on all sides.
- 5
Sprinkle cinnamon sugar evenly over buttered pastry, pressing gently to adhere.
- 6
Starting from one long edge, roll pastry tightly toward the center until you reach the middle, then repeat from the opposite edge. The two rolls will meet in the middle.
- 7
Freeze the rolled pastry for 10 minutes until firm enough to slice cleanly.
- 8
Slice into 3/4-inch-thick rounds using a sharp knife. Place flat on prepared baking sheets.
- 9
Sprinkle coarse sugar on top of each palmier. Bake 18–22 minutes until golden and caramelized.
- 10
Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
