Ingredients

  • 3 whole eggs
  • 2 tbsp butter, divided
  • 2 tbsp fresh herbs (chives, parsley, tarragon), chopped
  • 2 slices bread (sliced)

Instructions

  1. 1

Heat a nonstick skillet over medium with 1 tbsp butter until foaming, about 90 seconds.

  2. 2

Whisk eggs with salt and pepper, then pour into the skillet and let sit 20 seconds.

  3. 3

Gently push cooked egg to center, tilting the pan so uncooked egg reaches the edges, 2 minutes.

  4. 4

Scatter herbs over the omelet, then fold in half and slide onto a plate.

  5. 5

Toast the bread and spread with the remaining butter, then serve alongside the omelet.
