Ingredients

- ¾ cup warm water

- 1 cup crème fraîche
- 3 medium yellow onions, thinly sliced
- ½ tsp smoked paprika
- ½ tsp caraway seeds
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp fresh thyme leaves

Knead for 5 minutes until smooth and elastic. Let rest 20 minutes under a towel.

Heat 2 tbsp olive oil in a large skillet over medium heat.

Add sliced onions and cook 15–20 minutes, stirring occasionally, until deeply caramelized and golden.

Season caramelized onions with salt, pepper, and smoked paprika. Set aside.
