Ingredients

  • 2 cups all-purpose flour
  • ¾ cup warm water
  • ½ tsp salt
  • 1 tbsp olive oil
  • 1 cup crème fraîche
  • 3 medium yellow onions, thinly sliced
  • ½ tsp smoked paprika
  • ½ tsp caraway seeds
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp fresh thyme leaves
  • 2 tbsp olive oil

    Mix flour and salt in a large bowl. Create a well in the center.

    Add warm water and olive oil, stir until a shaggy dough forms.

    Knead for 5 minutes until smooth and elastic. Let rest 20 minutes under a towel.

    Heat 2 tbsp olive oil in a large skillet over medium heat.

    Add sliced onions and cook 15–20 minutes, stirring occasionally, until deeply caramelized and golden.

    Season caramelized onions with salt, pepper, and smoked paprika. Set aside.

    Preheat oven to 475°F (245°C). Oil a baking sheet.

    On a lightly floured surface, stretch dough into a thin rectangular sheet (about 1/8-inch thick).

    Transfer to baking sheet. Spread crème fraîche evenly over dough, leaving a thin border.

    Top with caramelized onions and sprinkle caraway seeds and thyme.

    Bake 12–15 minutes until crust is golden brown and edges are crispy.
