Ingredients

  • ½ lb beef ribeye or short loin, thinly sliced (1/16 inch)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 2 tbsp green onion, chopped

Instructions

    Whisk soy sauce, sesame oil, rice vinegar, and minced garlic in a small bowl. Divide between two dipping bowls.

    Heat a large skillet or griddle over medium-high until a drop of water sizzles and disappears instantly.

    Lay beef slices flat on the hot surface in a single layer without overlap. Sear 45 seconds without moving.

    Flip all slices at once. Sear 45 seconds more until the edges curl and the surface looks opaque.

    Slide the beef onto a serving platter. Scatter with green onion.
