Ingredients

  • ½ lb pork tenderloin
  • ½ cup dried wood ear mushrooms
  • 3 green onions
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sugar

Instructions

    Soak the 0.5 cup dried wood ear mushrooms in warm water until soft, about 15 minutes. Drain and slice into strips.

    Slice the 0.5 lb pork tenderloin into thin strips. In a bowl, mix 2 tbsp soy sauce, 2 tbsp rice vinegar, and 1 tbsp sugar to make the sauce.

    Heat 1 tbsp oil in a wok or large skillet over high heat. Add the pork and stir-fry until just browned, about 3 minutes. Remove and set aside.

    Add the sliced mushrooms and 3 chopped green onions to the same pan. Stir-fry for 2 minutes until fragrant.

    Return the pork to the pan, pour in the sauce, and stir-fry for 1 minute until everything is coated and the sauce thickens slightly. Serve hot.

    For extra heat, add 1 tsp chili flakes or a pinch of red pepper flakes with the mushrooms.
